James Chiu, George and Diana Chiu, and K.C. Chang moved to Ontario in 1979, after working for many years in restaurants in New York and Montreal. The attention to customer service and food quality soon made the Mandarin so popular that there were long line-ups. The size of the restaurant was increased three times in order to serve more customers. However, there were still long line-ups. As a result, the buffet was introduced to serve customers faster and to allow sampling of all the items on the Mandarin's menu.
