When Louis Nemes opened the Chick'n Deli in 1977 he had no idea that those modest beginnings were the seeds of a family business that would turn into a rapidly growing franchise dynasty. Louis opened Bistro on Avenue in 1985 after selling the Chick'N'Deli and, in 1992, invited his son-in-law, Brent Poulton, to join him in developing a new concept, the St. Louis Bar & Grill.
